Nov- Non traditional Holiday Recipes

Creamy No Bake Cheese cake

1 (8oz) pkg cream cheese
1 small cool whip
1/3 cup sugar
1 graham cracker crust

Mix cream cheese, cool whip and sugar until well blended.  Pour into graham cracker crust.  Let chill and set up in refrigerator for about 1hour.  Top with your favorite fruit topping.  This is one of our favorite desserts to make at any holiday.  It is quick and yummy and always a crowd pleaser.

Christmas Bread

Sift 6 cups flour
1 tsp salt
2 tsp baking powder
add
1 1/2 cups sugar
1 cup butter
6 eggs
(16 oz) 2 cups cherries, quartered
1 (12 oz) bag chocolate or mint chips
Mix all together. drop onto floured board.  Knead until well mixed.  Roll into ball.  Cut into 4 equal portions.  Place on greased cookie sheet - flatten to 1/2 inch thick.  Brush with egg white.  Bake at 325 degrees for 25 to 30 minutes or until toothpick comes out clean.


Bread Pudding

1pt milk
1/2 tsp vanilla
3/4 cup sugar
1 pint cream
4 eggs
1 loaf sliced bread - any flavor (I like to use cranberry orange from great harvest)
Preheat oven to 325
Custard base: heat milk and cream in sauce pan just to the point where it almost boils.  Remove from heat and add vanilla and orange zest.  In a bowl whisk eggs and sugar until pale.  Stir eggs into cream and mix completely.  Butter each slice of bread and dip into custard.  Pile bread into a greased baking dish.  Then pour the remaining custard slowly over the bread.  Place the dish inside a roasting pan and fill half way up with water.  Bake for about 45 min.  When cooked, it will have a slight crust on top, but will still be slightly wobbly inside.

Kitty Litter Cake

1 spice cake mix
1 white cake mix
2 big boxes vanilla pudding
white cream filled cookies
green food coloring
tootsie rolls

Cook both cakes as directed on the box.  Let them cool completely. Make pudding.  Cut cakes in a half- In a big mixing bowl mix half the white cake, half of the spice cake and 1box of pudding together.  Put in a clean (never been used) kitty litter box.  Crush about 1/3 of the cookies up and spread across the top.  Melt a few tootsie rolls in the microwave (6 to 8 sec) and then roll thin- putting them on top of cake layer.  Repeat with the other half of ingredients.  With the last 1/3 of cookies crumble them very fine and add the food coloring- then sprinkle on top of cake.  We like to "hide" a few tootsie rolls throughout the cake.


Kitty Litter Cake

2 8-oz. packages cream cheese, softened (you can use light cream cheese)
2 c. (8 oz.) shredded sharp cheddar cheese (I used a regular cheese instead of the sharp)
3 Tbsp. finely chopped green onions
1/4 c. finely chopped bell pepper (any color)
2 tsp. seasoning salt
1 small can crushed pineapple, drained very well (you may want to press in a fine-mesh strainer)
1/2 c. pecan pieces, chopped (you can also use pecan “chips”)

In a medium bowl, combine all ingredients except pecans. Mix well. When thoroughly mixed, shape into a ball and roll in crushed pecans. Chill thoroughly. Serve with crackers and/or vegetables.
